These Potato Pancakes are so yummy and have comfort meal written all over them. I decided to stuff them with creamed spinach because I Love spinach, especially when there is heavy cream, onions and mozzarella cheese involved. It was the perfect moist and cheesy filling for the potatoes too. I added chicken to it for some extra protein, but they would also be amazing omitting it, making them vegetarian.
Macaroni and cheese is one of my favorite comfort foods. It inspired this quick weeknight one pot meal. I replaced macaroni with zucchini noodles and added some rotisserie chicken for extra protein.
This recipe combines the sweetness of a poached pear, with the savory flavors of chicken broth, Dijon mustard and tarragon. I love the way the sweet and salty flavors compliment each other, especially when served with chicken and the peppery flavor of arugula.
