Green Mac & Cheese
  1. Make the macaroni and cheese as directed on the box.
  2. Bring your spinach to room temperature. Squeeze out liquid. (it does not need to be extremely squeezed dry, some moisture is fine. Just a squeezing the bag or box in your hands over the sink will do.)
  3. Put the spinach, cream cheese, 1 cup of milk. garlic and onion powder and mustard in a food processor and blend well. You really want to break down the spinach leaves so theres no visible leaves.
  4. Stir the spinach mixture in the mac and cheese and heat over the stove on medium low heat. Add more milk to get the consistency you like. Salt and pepper to taste.
  5. Optional : Stir in 1 can of white beans or 2 cups cooked shredded or diced chicken. Over here, green hot sauce and sliced scallions would be the perfect topping. You do you.
