Halloumi Pea Patties

When I went to the mediterranean island of Cyprus last November I learned how halloumi is made from it’s Origin.

Yes, halloumi cheese comes from Cyprus and the villagers have been making this cheese since the mid 16th century. It is also very popular in Greece and Turkey. Some compare it to feta, and some compare it to mozzarella. It has a salty flavor and is stored in its own juices. It’s not as crumbly as feta and holds up well to slicing and frying because it won’t melt when heated. When cooked, its firm texture gives you a squeak on your teeth kind of feel when chewed. In this recipe it is shredded and it holds up nicely in the patties giving them a creamy texture and fantastic flavor. Halloumi is one of my favorite cheeses right now and I love finding new ways to cook with it.

I served them the first time for dinner when my vegetarian best friend came to visit. They were delicious with with a mixed green salad, avocado and radishes. Any salad dressing would be tasty with this, but I used a garlicky vinaigrette. The patties are also great as an appetizer served with plain yogurt and finely chopped dill & mint to dip them in.

These patties are seriously the best thing I’ve put in my mouth in a long time. They are super easy to meal prep and store in the fridge for up to 5 days. They also freeze well, so if you’re into big batch cooking, you definitely need to give these a try.

They are vegetarian and a great source of protein. They area also gluten free if you are carful about where you get your oats.

  1. Shred your zucchini and place on a dish towel and sprinkle salt over and set aside.
  2. In a food processor mix the peas, mint and dill until a pasty ball starts to form. Scrape it all out and put it in a medium size mixing bowl.
  3. Shred the halloumi cheese and place in bowl with pea mixture.
  4. In a small bowl whisk egg and then add cornstarch and whisk until well blended. Then add to the bowl with peas and halloumi. Add oats, scallions, salt and pepper.
  5. After the zucchini has sat for about 20-30 minutes, gather it up in the dish towel and squeeze out as much liquid as possible. Then add to the bowl with everything else and stir it well to combine the ingredients.
  6. Preheat your oven to 400 degrees F. Form the mix into small patties. I used a round trigger ice cream scoop that is probably 2 tablespoons and it made it easy to keep the portions the same. Heat your oil in a large sauté pan and fry your patties on both sides until a nice brown crust forms, being careful with them when you turn them.
  7. Put the fried patties on a parchment lined sheet pan and heat in the oven for 10 minutes. Serve warm or room temperature as an entree or appetizer.
