Mediterranean Chicken Burger

These Mediterranean Chicken Burgers are my favorite right now. They have ground chicken, spinach, mushrooms and dill in them. They are super simple to make and have tons of veggies packed inside – actually more than the meat! I know they will become one of your favorites too.

I like to use ground chicken thighs in this recipe. It can be a bit hard to find, but well worth it. I go to Earth Fare and ask them to ground them for me since they only have ground chicken breast in their case. All you have to do is ask. And like I said, it’s well worth it because it adds more flavor and won’t dry out like breast meat can.

I like to serve these with either french fries or with a salad. We usually eat them on an english muffin with arugula and picked onions. This time of the year I add ripe tomatoes either grilled or raw, I just can’t resist.

First thing I do is put the mushrooms through the food processor, then I chop the spinach, dill, onions and garlic by hand. Here’s a picture below before I added the meat. Check out all those yummy veggies!

After adding the ground chicken you make them into patties, and either grill them or bake them in the oven. If you are going to grill them you will need to put them on either tinfoil or a grill plate because they are very soft patties when raw.

The recipe below makes six nice sized patties for an english muffin. You can see I doubled (or maybe tripled) the recipe above because we love them so much. They freeze great, so I end up putting some in the freezer to have them on hand anytime with little effort.

I serve them with either a pesto butter or pesto yogurt spread.

For the Pesto Butter – bring 3-4 tablespoons of butter to room temperature and blend well (I just use a fork) with 1 tablespoon of pesto, adding more to taste.

For the Pesto Yogurt Spread – mix 6-8 ounces of greek yogurt with 1-2 tablespoons pesto. You want a thick yogurt for this so you can spread it, my favorite brand if Fage Total 5% (the blue label). Add some more chopped dill to add more flavor.

Instructions
  1. Slice your mushrooms in half or quarter them depending on size. In two batches, pulse the mushrooms through a food processor until finely chopped. Set aside in a large bowl.
  2. Finely chop spinach and dill and add to mushrooms. Add chopped onions and minced garlic to the bowl as well.
  3. Combine the ground chicken to the veggies, and and mix until combined with your hands, being careful to not over mix or the patties will be tough.
  4. Make 6 equal parried and grill or bake in a 375 degree oven for about 20-25 minutes or until cooked through. If grilling, use tin foil or a grill plate because the raw patties are soft. Serve on english muffins with desired toppings. Pesto butter and pesto yogurt spread is listed in the post above.
