Mediterranean Chicken Burger
  1. Slice your mushrooms in half or quarter them depending on size. In two batches, pulse the mushrooms through a food processor until finely chopped. Set aside in a large bowl.
  2. Finely chop spinach and dill and add to mushrooms. Add chopped onions and minced garlic to the bowl as well.
  3. Combine the ground chicken to the veggies, and and mix until combined with your hands, being careful to not over mix or the patties will be tough.
  4. Make 6 equal parried and grill or bake in a 375 degree oven for about 20-25 minutes or until cooked through. If grilling, use tin foil or a grill plate because the raw patties are soft. Serve on english muffins with desired toppings. Pesto butter and pesto yogurt spread is listed in the post above.
